Tom Kha Kai (Chicken in Coconut Soup)        In Thailand, most tom kha kai recipes typically include coconut milk, galangal, kaffir lime leaves, lemongrass, Thai chili peppers, coriander (or dill weed), straw mushrooms (or shiitake or other mushrooms), chicken, fish sauce, and lime juice. Fried chilies are sometimes added.           If you’re unacquainted this one, it’s basically the Thai version of creamy chicken soup.  It’s made with a super rich and flavorful coconut milk base, it can be made with chicken or you could sub in another favorite protein , and  it’s actually interestingly easy to make it at home.        Tom kha kai  isn’t  just any dish; it’s one of  my  top  five  most favorite  dishes  in  the  world. At a risk of taking.
