The name of the dish translates to "fried w/ soy sauce" and it is very similar to the "char kway teow" of Singapore and Malaysia. Pad see ew is normally stir fried dry while another similar dish, It is served in a thickened sauce and normally has a lighter taste.
Pad see ew made with dark soy sauce , light soy sauce , garlic, broad rice noodles, Chinese broccoli, egg, and some form of thinly sliced meat commonly pork, chicken or beef or shrimp or mixed seafood.
