Pad thai is made with soaked dried rice noodles, which are stir-fried with eggs and chopped firm tofu, and is flavored with tamarindpulp, fish sauce, dried shrimp, garlic or shallots, red chili pepper and palm sugar and served with lime wedges and often chopped roasted peanuts. It may contain other vegetables like bean sprouts, garlic chives, pickled radishes or turnips, and raw bananaflowers. It may also contain fresh shrimp, crab, squid, chicken or other animal products. Many of the ingredients are provided on the side as condiments such as the red chili pepper, lime wedges, roasted peanuts, bean sprouts and other miscellaneous fresh vegetables. Vegetarian versions may substitute soy sauce for the fish sauce and omit the shrimp.
Pad thai is perhaps the #1 order at your local Thai restaurant. The traditional version is a bit funky (fish sauce and dried shrimp), sour (fresh tamarind paste), and sweet (palm sugar). There’s also almost always a base of wide rice noodles, a generous sprinkle of crushed peanuts on top, and a lime wedge served alongside. The addition of an egg, scrambled in the wok, and a pile of fresh bean sprouts are also in most versions of the dish.
This is usually served with a wedge of lime and sliced banana flower or cucumber rounds. When eating in Thailand, you will always find a selection of condiments at your table and most people will add white vinegar spiked with sliced hot green chilies, white sugar, fish sauce, and dried ground chili in amounts according to their personal taste.

This is not the usual way it is made in Thailand, but some Thais do use Sriracha(a red hot sauce) A tasty Pad Thai can be made from ready-made Pad Thai sauce, which is convenient, but it is fun and easy to make from scratch if you have all the necessary ingredient.
