Som Tam (Green Papaya Salad)



      Green papaya salad is a spicy salad made from shredded unripe papaya. Probably originating from ethnic Lao people, it is also eaten throughout Southeast Asia. Locally known in Cambodia as bok l'hong , in Laos as tam som or the more specific name tam maak hoong , in Thailand as som tam (Thai: ส้มตำ]), and in Vietnam as gỏi đu đủ. Som tam, the Thai variation, was listed at number 46 on World's 50 most delicious foods compiled by CNN Go in 2011.

          The two most popular types of green papaya salad have either dried shrimp or salted crab. Green papaya salad with dried shrimp and peanuts is called som tum thai. The green papaya salad with salted crab is called som tum pbooh. The majority of the ingredients are the same. I likes it with both dried shrimp and  crab.

          The salad can be as simple or complex as you choose—for a vegetarian salad, stick with other vegetables that also benefit from being dressed in lime and fish sauce, such as carrots, daikon, and cucumbers. Parboiled shrimp and squid are fine additions. Another Vietnamese favorite uses shreds of Asian beef jerky, which softens as it soaks up some of the lime and chili dressing.

        The bright, pure flavors of the salad make it a refreshing starter to your meal. Though cilantro and Thai basil are common herbs to pair with the salad, try using any leafy herb growing in your garden.
